Italian Style Slow Cooking Boston Butt Pork Recipe

Ingredients
  

  • 3-4 Pounds Boston Butt Pork Or any type of boneless pork shoulder
  • 1 Onion Sliced
  • 3 Carrots Chopped large
  • 1 Pound Mushrooms Sliced
  • 1 Pound Plum Tomatoes Quartered
  • 16 Ounces Canned Plum Tomatoes Quartered
  • 1 Cup White Wine
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Salt
  • 1 Teaspoon Pepper
  • Bunch of Parsley Chopped

Instructions
 

  • Cube your pork and sear it in olive oil for 5 to 7 minutes on each side on high heat. Add salt and pepper to both sides while it is searing. You want both sides to have a nice color.
  • Add your onions, mushrooms, and carrots, and cook for 5 minutes. Continue on high. Stir occasionally.
  • Add you cup of wine and let it evaporate, around 3 minutes.
  • Add your tomatoes (canned and fresh) and bring everything to a boil. Top with parsley and mix everything together. Once boiling, lid and turn heat to low (around 325°F). Cook for 2 more hours. Stir every 30 minutes.

Notes

If you need more liquid, you can add tomato juice from the can or water. You can also use only canned tomatoes, only fresh tomatoes, or a combo of the two like us. Sometimes using all canned tomatoes saves a lot of time and still tastes great! Add some more parsley at the end to your liking. It serves well with polenta.
