For the White Bean Cream

For the Crostini:
1-2
Baguettes
depending on required quantity
Olive Oil for brushing
Instructions
Prepare White Bean Cream
In a blender, combine the white beans, 3 tablespoons of olive oil, and 1 tablespoon of lemon juice.
Blend until smooth to create a creamy consistency. Set aside.
Prepare Crab Meat Mixture
In a mixing bowl, combine 1 pound of crab meat with 1/4 cup of olive oil.
Add lemon juice, 1/2 teaspoon of salt, 1 teaspoon of black pepper, and lemon rind to the mixture. Mix well.
Stir in 1/2 finely chopped jalapeno pepper and 2 tablespoons of finely chopped fresh parsley.
Mix everything thoroughly to ensure the flavors are well combined.
Refrigerate the crab meat mixture for about 30 minutes. You can extend this up to 3 hours if needed.
Prepare Crostini
Preheat your oven to 350°F (175°C).
Slice the baguette diagonally or into rounds, about a finger's width thick.
Brush each slice on both sides with olive oil.
Toast the bread slices in the preheated oven for about 14 minutes, flipping them halfway through to ensure even toasting.
Assemble Crostini
Spread a layer of the white bean cream on each toasted bread slice.
Top each slice with a generous amount of the crab meat mixture.
Optional: Garnish with additional parsley or other seasonings of your choice.
