Crostini with Crab Meat & White Bean Cream

Ingredients
  

For the White Bean Cream

  • 1 Can White Beans drained and rinsed
  • 3 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice

For the Crab Meat Mixture

  • 1 pound Crab Meat
  • ¼ cup Olive Oil
  • Lemon Juice entire lemon
  • ½ teaspoon Salt
  • 1 teaspoon Black Pepper
  • Lemon Rind entire lemon
  • ½ Jalapeno Pepper finely chopped (optional)
  • 2 tablespoons Fresh Parsley finely chopped

For the Crostini:

  • 1-2 Baguettes depending on required quantity
  • Olive Oil for brushing

Instructions
 

Prepare White Bean Cream

  • In a blender, combine the white beans, 3 tablespoons of olive oil, and 1 tablespoon of lemon juice.
  • Blend until smooth to create a creamy consistency. Set aside.

Prepare Crab Meat Mixture

  • In a mixing bowl, combine 1 pound of crab meat with 1/4 cup of olive oil.
  • Add lemon juice, 1/2 teaspoon of salt, 1 teaspoon of black pepper, and lemon rind to the mixture. Mix well.
  • Stir in 1/2 finely chopped jalapeno pepper and 2 tablespoons of finely chopped fresh parsley.
  • Mix everything thoroughly to ensure the flavors are well combined.
  • Refrigerate the crab meat mixture for about 30 minutes. You can extend this up to 3 hours if needed.

Prepare Crostini

  • Preheat your oven to 350°F (175°C).
  • Slice the baguette diagonally or into rounds, about a finger’s width thick.
  • Brush each slice on both sides with olive oil.
  • Toast the bread slices in the preheated oven for about 14 minutes, flipping them halfway through to ensure even toasting.

Assemble Crostini

  • Spread a layer of the white bean cream on each toasted bread slice.
  • Top each slice with a generous amount of the crab meat mixture.
  • Optional: Garnish with additional parsley or other seasonings of your choice.
