Fish Stew
Ingredients
- 3 Tbsp Olive Oil
- 2 shallots or leaks – Chopped
- 2 carrots chopped
- 2 celery stalks chopped
- 1 zucchini chopped
- ½ red bell pepper
- 1 can 15oz. diced tomatoes or cherry tomatoes if available
- 4 oz. fresh mushrooms
- 1 tsp salt
- 1 tsp pepper
- ½ tsp pepperoncino (hot pepper flakes
- ½ cup white wine
- 2 bottles of clam juice
- 1 pound salmon cut into bite size pieces
- 1 pound shrimp cut into 3rds
- 1 lemon – both juice & zest
- Parsley to taste
Instructions
- Put olive oil in a large pan over medium heat for about 1 minute
- Add all vegetables and sauté for about 4 minutes
- Add all salt and pepper when you sauté the vegetables
- Add wine and it will evaporate in 30 seconds to 1 minute
- Add clam juice
- Cook all over medium for an additional 4 minutes
- Add salmon and shrimp and combine with vegetables
- Cook all for 2 minutes
- Add lemon juice/zest and parsley
- Cover and cook for 3 more minutes
