Zesty Chicken Piccata Recipe
A mouthwatering recipe for chicken piccata that will have dinner guests coming back asking for more! We hope you enjoy this recipe.
Ingredients
- 2 Chicken Breast cut in half or chicken cutlets 4 total pieces
- Juice of 1 Lemon
- ¼ cup Capers rinsed
- ½ cup Flour
- ½ stick of Butter
- Salt and Pepper to Taste
- 2 Tbsp Olive Oil
- 1 cup Chicken stock bullion Can also use beef stock if you prefer
- Fresh Parsley
Instructions
- Put salt and pepper on chicken and dredge them in flour
- On stovetop skillet heat 2 Tbsp of butter and 2 Tbsp of Olive Oil
- When hot, place chicken in skillet and cook for 3 minutes on each side. Then remove from skillet
- Wipe out excess oil from skillet
- Put chicken stock, lemon juice and capers into skillet
- When mixture begins to bubble add chicken back into skillet
- Cook for 3 minutes
- Remove chicken and place on clean serving plate
- Add 2 more Tbsp of butter to the sauce until melted
- Pour sauce over chicken, add parsley and serve
