Spicy Chicken with Olives!

In this video, we show you how to make a simple spicy roast chicken with olives. We include a side dish of mushrooms with spinach and cream! Absolutely delicious 🙂

Spicy Chicken with Olives!

Ingredients
  

For the Spicy Chicken with Olives:

  • 1 whole chicken cut in half
  • 2 tablespoons Dijon mustard
  • 2 tablespoons ground black pepper
  • 1 teaspoon red pepper flakes
  • 1 cup pitted green and black olives
  • 1 cup dry white wine
  • 4 tablespoons olive oil
  • Salt to taste

For the mushroom and spinach side:

  • 2 cups mushrooms
  • 1 bag 5oz baby spinach
  • ½ cup heavy whipping cream
  • 2 tablespoons olive oil

Instructions
 

For the Spicy Chicken with Olives:

  • Begin by preheating your oven to 425F.
  • In a bowl, mix together your mustard, black pepper, and red pepper flakes. Evenly spread the mixture over your chicken. Season with salt.
  • Put your chicken in the oven for 20 minutes.
  • After 20 minutes has passed, remove your chicken and drizzle your olive oil over the chicken. Add the olives and wine as well. Place your chicken back in the oven for another 40 minutes. If you notice it cooking fast, for the last 20 minutes just cover your chicken with aluminum foil! After your timer rings, take it out and enjoy!

For the mushroom and spinach side:

  • Add mushrooms to a pan with olive oil. Sauté for around 3 minutes. Add pepper and salt to taste.
  • After 3 minutes, add half of your spinach and wait for it to wilt into the recipe. At that point, add the rest of your spinach and continue to cook until it is wilted as well, stirring occasionally for another 2-3 minutes.
  • Lastly, add your cream, cook for 2-3 more minutes until it is slightly thickened, remove from heat, and enjoy!
